Ingredients

  • 1 cup Arborio rice
  • 1 ½ cups pumpkin puree
  • 1 shallot, finely chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup Champagne (dry)
  • ½ cup Parmesan cheese, grated
  • 2 tablespoons olive oil
  • 1 teaspoon thyme leaves
  • Salt and pepper to taste
  • Fresh parsley, for garnish
     

Directions

In a saucepan, heat vegetable broth to a gentle simmer; keep warm.
 

In a large skillet, heat olive oil over medium heat and sauté the shallot and garlic until translucent.
 

Add the Arborio rice and toast for 2-3 minutes, stirring often.
 

Gradually add the Champagne, stirring until absorbed.
 

Once absorbed, add the pumpkin puree and thyme, incorporating well.
 

Begin adding the warm broth, one ladle at a time, stirring continuously until each addition is absorbed before adding more. Repeat until rice is creamy and al dente (about 18-20 minutes).
 

Stir in the Parmesan cheese, and season with salt and pepper to taste.
 

Remove from heat, garnish with fresh parsley, and serve warm.
