Have you ever tried putting gin in your salad? This gourmet chicken salad is both flavorful and refreshing.

 

Ingredients

  • 1 boneless, skinless chicken breast (about 6 ounces)
  • 2 tablespoons gin
  • 1 tablespoon olive oil
  • Juice of 1/2 lemon
  • 1 teaspoon honey
  • Salt and pepper, to taste
  • 1 cup mixed salad greens (arugula, spinach, or your choice)
  • 1/4 cup cherry tomatoes, halved
  • 1/4 cucumber, sliced
  • 2 tablespoons feta cheese, crumbled
  • Fresh herbs (basil, parsley, or dill), chopped, for garnish
     

Directions

In a small bowl, whisk together the gin, olive oil, lemon juice, honey, salt, and pepper. Add the chicken breast and coat it well. Cover and marinate in the refrigerator for at least 30 minutes (or up to 2 hours for more flavor).

 

Preheat a grill or a skillet over medium-high heat. Remove the chicken from the marinade (discard the marinade) and cook it for about 6-7 minutes on each side or until fully cooked and golden brown. The internal temperature should reach 165°F (75°C). Remove from heat and let it rest for a few minutes.


While the chicken is resting, in a large bowl, combine the mixed salad greens, cherry tomatoes, and cucumber. Toss gently.

 

Once the chicken has rested, slice it into strips and place it on top of the salad mixture. Sprinkle with feta cheese and fresh herbs.

 

Drizzle a little extra olive oil and lemon juice over the salad if desired. Enjoy your vibrant gin-infused lemon herb chicken salad!
