This recipe infuses succulent lamb chops with the rich flavors of red wine and aromatic herbs, resulting in a dish that's perfect for a special occasion or a luxurious weeknight dinner.
 

Ingredients

  • 28 lamb chops, about 1 inch thick
  • 1 cup red wine (choose a robust variety)
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, finely chopped
  • 2 tablespoons fresh thyme, finely chopped
  • 1 teaspoon Dijon mustard
  • Salt and black pepper, to taste

 

Directions

Combine red wine, olive oil, minced garlic, chopped rosemary, chopped thyme, Dijon mustard, salt, and black pepper. Mix well to create the marinade.

 

Place the lamb chops in a shallow dish or a resealable plastic bag. Pour the marinade over the lamb, ensuring each chop is well-coated. Marinate in the refrigerator for at least 2 hours, or ideally, overnight for maximum flavor.

 

Preheat your grill to medium-high heat.

 

Remove the lamb chops from the marinade, allowing any excess to drip off. Reserve a portion of the marinade for basting.

 

Season the lamb chops with additional salt and black pepper to taste.

 

Place the lamb chops on the preheated grill. Grill for approximately 4-5 minutes per side for medium-rare, adjusting the time based on your preferred doneness.

 

During the last few minutes of grilling, baste the lamb chops with the reserved marinade for an extra layer of flavor. Ensure the lamb is cooked to your desired level of doneness.

 

Remove the lamb chops from the grill and let them rest for a few minutes. This allows the juices to redistribute.
