Indulge in a tropical twist with this moist pineapple cake drenched in a sweet rum glaze. The caramelized pineapple slices on top add a burst of flavor to every bite.

 

Ingredients

  • 1/2 cup unsalted butter
  • 3/4 cup brown sugar
  • 1 can pineapple slices
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup rum
  • 1 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract


Directions

Preheat oven to 350°F and melt butter in a 9-inch cake pan. Sprinkle brown sugar over the melted butter. Arrange pineapple slices on top of the sugar.

 

In a bowl, mix flour, baking powder, and salt. In another bowl, beat sugar, eggs, and vanilla. Gradually stir in flour mixture and rum into the sugar mixture.

 

Pour batter over the pineapple slices.

 

Bake for 40-45 minutes. Let it cool, then invert onto a serving plate.
