These skewers feature marinated chicken pieces infused with the zesty combination of tequila and lime, creating a refreshing and savory dish.

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into cubes
  • 1/4 cup tequila
  • 1/4 cup fresh lime juice
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • Salt and black pepper to taste

For the Skewers:

  • Wooden or metal skewers, soaked if using wooden
  • Bell peppers, onions, or other vegetables for skewering (optional)

Directions

In a bowl, combine tequila, fresh lime juice, olive oil, minced garlic, cumin, chili powder, paprika, salt, and black pepper. Mix well to create the marinade.

Place the chicken cubes in a shallow dish or a resealable plastic bag. Pour the marinade over the chicken, ensuring each piece is well-coated. Marinate in the refrigerator for at least 30 minutes, or ideally, let it marinate for 2-4 hours for more flavor.

Preheat your grill or broiler to medium-high heat.

Thread marinated chicken cubes onto skewers, alternating with your choice of vegetables if desired. This adds color and additional flavor.

Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has a nice char. Alternatively, if using a broiler, place the skewers on a broiler pan and broil for the same amount of time.

While grilling or broiling, baste the skewers with the reserved marinade for an extra burst of flavor.

Once cooked, transfer the Tequila Lime Chicken Skewers to a serving platter. Garnish with fresh lime wedges and chopped cilantro if desired.

Serve these flavorful skewers as an appetizer or as a main course. They pair well with rice, grilled vegetables, or a light salad.
