Ingredients

  • 8 oz pasta (penne, fettuccine, or your choice)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional, for a bit of heat)
  • 1/2 cup vodka
  • 1 can (14 oz) crushed tomatoes
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup heavy cream
  • Salt and black pepper to taste
  • 1/2 cup grated Parmesan cheese
  • Fresh basil, chopped, for garnish

 

Directions

Cook pasta according to package instructions.

 

In a skillet, melt butter and add vodka. Simmer for a few minutes to reduce.

 

Stir in heavy cream, Parmesan cheese, and sun-dried tomatoes. Cook until the sauce thickens.
